Some Things You Didn’t Know About Cheese - Also a Brief History

Most people think that cheese was originally made in the Middle East. This is probably true, but some sources credit it to the Greeks. The earliest type of cheese was kind of a sour milk which was made one day when someone discovered that animals could be milked. The legendary story says that cheese was discovered by an unnamed Arab. He was supposed to be living somewhere in the middle east and is said to have filled a sack with milk to take with him on a journey across the desert, probably on horseback. After hours upon hours of riding through the desert he stopped for a drink of milk, to his surprise he found that the milk had separated into watery clear liquid and solid white lumps.
The sack which was made from the stomach of an animal, contained an enzyme called rennin, the milk had been separated into curds and whey by combining the rennin, the hot sun, and the motions and movements of the horse.
The Arab, not worried about the technical details, found the whey drinkable and the curds, deliciously edible.
In the Roman era, Cheesemaking was done with skill, precision and knowledge, and reached a very high standard. By the time of the Roman era, the ripening process had been completely developed and the Romans realized that different treatments under different conditions and storage places resulted in different types, flavours and textures of cheese.
Around the middle ages, priests and monks became inventors and developers, and are responsible for many of today’s varieties of cheeses.
It wasn’t before long, that people started to invent machines to grate, slice, and mould the cheese. One of these marvelous inventions was the Rotary cheese grater, other smart inventions such as the drum cheese grater and other industrial varieties followed.
